Additionally, there is a growing interest in health and well-being, acknowledging that fat is not the enemy. Olive oil, a staple in Mediterranean cooking, is high in monounsaturated fats, which are beneficial for heart health. Additionally, foods like nuts and fatty fish provide omega-3 fatty acids, which have anti-inflammatory properties. Mediterranean dishes are often flavoured with herbs and spices rather than salt, reducing sodium intake while adding flavour and complexity to dishes. We are also seeing ancient grains like quinoa, farro, and bulgur gaining popularity as consumers seek out healthier alternatives to refined grains. Mediterranean food offers plenty of potential for vegetarian and plant-based options, as this cuisine is based around an abundance of vegetables, legumes, and grains in the region’s cuisine.
